Citrus Barbecue Sauce

Ingredients:

1 onion, chopped
1/4 teaspoon chili powder
1 red chili pepper, seeded and chopped (see note)
1 tablespoon vegetable oil
1 cup orange juice
1/2 cup lime juice
2 tablespoons granulated sugar
2 tablespoons lemon juice
1 tablespoon chopped fresh cilantro
1 teaspoon salt
  1. In a large skillet over low heat, saute chopped onion, chili powder, chopped red chili pepper, and red pepper flakes in oil, stirring frequently, until the onion is tender, about 5 minutes.
  2. Stir in orange juice, lime juice, sugar, lemon juice, cilantro, and salt. Increase heat to medium-high, bring to a boil; reduce heat to low, and simmer, uncovered, for about 10 minutes, stirring occasionally.
Makes about 2 cups
